- There are many brands of vegan mayo on the market today. I've never met one I didn't like, but one of the brands I currently buy is Follow Your Heart.
- I buy one small can of chipotle peppers in adobo sauce, which lasts for many batches of this sauce. You can find the cans of chipotle pepper in adobo sauce in the Latin section of all major grocery chains.
- Taste and adjust the seasoning as needed, adding more salt or lime juice to taste. Adjust the viscosity by adding more water to make it thinner or adding more mayo to thicken.
- Chill for 30 to 60 minutes so the flavors can meld together.
