With just 4 ingredients and salt and pepper, this mint salad dressing is quick to make. See the recipe card for quantities.

Vegan Mayo: I've never met a vegan mayo I don't like, and I'll also add that I've never met anyone who can tell the difference between a traditional and a vegan mayo. This is, bar none, the easiest vegan swap to make. You can substitute the vegan mayonnaise with either vegan sour cream or yogurt. The taste will vary slightly, so taste and adjust the other ingredients as necessary.
How to Make Lemon Mint Salad Dressing

Step 1: Combine the mint, mayo, lemon juice, maple syrup, salt, and pepper in a blender, bullet, or food processor.

Step 2: Start blending until everything is well combined and smooth. You may need to scrape down the sides of the blender to get everything evenly mixed. Thin it with water if necessary. Immediately serve or refrigerate.
Top Tips
- Using fresh mint leaves is important. Their vibrant flavor and aroma can't be matched by dried mint.
- Start with the base recipe, then taste and tweak as you go. Everyone's palate differs, so feel free to make it your own.
- Letting the dressing chill in the fridge a bit allows the flavors to meld together, but it's unnecessary.
- Mint is a strong flavor. I've sometimes added too much mint, which quickly overpowers the dressing. Start with a little and add more as needed.
- Add one tablespoon of water to thin it out. Stir until it has reached your desired consistency.
