  • Silken Tofu - I use firm silken tofu, which I buy at Whole Foods or on Amazon in bulk.
  • Apple Cider Vinegar - Substitute with red wine vinegar, white wine vinegar, or rice wine vinegar.
  • Pure Maple Syrup - This recipe is on the sweeter side. Adjust to taste for more or less sweetness. Agave is a great substitute.
  • Olive Oil - This is optional. Use extra virgin olive oil if available.

  • 12 ounces silken tofu 1 box
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons maple syrup adjust to taste for more or less sweetness
  • 2 teaspoons Dijon mustard
  • ¼ teaspoon salt to taste

  • 3 tablespoons olive oil
  • 3 tablespoons water
  • 2 tablespoons poppy seeds
  • juice of ½ lemon optional
