  • ½ cup vegan mayo
  • 1-2 chipotle pepper in adobo sauce adjust for desired spiciness
  • 2 cloves garlic
  • 1 tablespoon water optional; adjust for desired viscosity
  • 1 tablespoon lime juice or ½ lime
  • ¼ teaspoon salt
  • teaspoon pepper to taste

Instructions
 

  • Blend: In a blender or food processor, combine the mayonnaise, chipotle pepper, garlic, water, lime juice (if using), salt, and pepper. Blend until the sauce is smooth and creamy.
  • Adjust: Taste and adjust seasoning as necessary.
  • Store: Store the sauce in an airtight container in the refrigerator until ready to use. This aioli will keep just as long as mayo in an air-tight container in the fridge.

Notes

You can use a blender, bullet, food processor, or immersion blender to make this sauce, but a bullet is especially convenient—it’s compact and powerful enough to blend the sauce quickly and smoothly with minimal cleanup. Perfect for small batches.
