You might have seen this recipe floating around TikTok under the name 'Japanese cheesecake,' and while the name might not make perfect sense, the hype is around how simple it is and how easily it creates a delicious snack or dessert.

At its core, it's just yogurt and cookies, but honestly, it's no less delicious and just as simple as other simple desserts like Pastelitos de Guayaba, a banana split, a brownie with ice cream, or Chocolate Banana Ice Cream.

Still, there's a reason it's gone viral: the Biscoff cookies soften overnight into a rich, spiced, "cheesecake-like" texture that's surprisingly good. No-bake, low effort, and absolutely worth the hype.

The vegan Greek yogurt stays thick and tangy underneath, and together they create a flavor combination that is so much more than the sum of its parts. Perfect for those nights when you want tomorrow's treat completely sorted before you even go to bed.

Cookies: You can use most vegan cookies, like Oreos or certain graham crackers, but Biscoff cookies are what make the viral version what it is. You won't use the whole pack, so save the rest for my Biscoff Baked Oats - they won't go to waste.

Yogurt: This does not work well with regular yogurt. It should be Greek style like my Vegan Greek Yogurt. My top pick for store-bought is Forager Greek-style yogurt, but Kite Hill Greek yogurt works too. I like it unsweetened, but you can certainly get it sweetened if you like.

Optional: If you're using unsweetened yogurt, consider adding maple syrup, but go easy - too much can thin it out, and you want to keep that thick, Greek-style texture. If you prefer, swap it for a dry, non-runny sweetener, such as coconut, brown, or white sugar.

Variations

  • Swap the Biscoff cookies for Oreos or Lorna Doone
  • Layer in some sliced banana or fresh strawberries between the yogurt and cookies, or add them to the top
  • Try it with a dollop of vegan whipped cream on top
  • Add a pinch of cinnamon or cardamom to the yogurt before assembling
  • Stir in instant espresso powder into the yogurt before assembling. I like to dissolve espresso powder in a tiny splash of warm water before stirring it into the yogurt. It blends in much more smoothly that way.

Step 1: Stir in any optional add-ins like maple syrup, then transfer to individual containers, a larger dish, or simply keep it in the original container.

Step 2: Add the cookies, either horizontally or vertically, into the yogurt until it is almost completely submerged. Refrigerate overnight, then add any optional toppings.

Top Tips

  • Use Greek yogurt. Regular vegan yogurt is too thin and won't provide the thick, creamy base the whole recipe depends on.
  • Don't skip the overnight rest - 6 to 8 hours is the sweet spot.
  • This keeps in the fridge for 2-3 days, so make the whole container once, and you have dessert for several days.

Serving Suggestions

  • Serve straight from the fridge in the dish, jar, or container you made it in - no plating required, which is part of the charm
  • Make in small glass jars or ramekins for individual portions - perfect for dinner parties or potlucks
  • Top with a dusting of crushed Biscoff crumbs just before serving for a little extra texture and a beautiful finish
  • Drizzle with warmed Biscoff spread (or thinned with a splash of plant milk) over the top right before serving

Can I use regular vegan yogurt instead of Greek?

Unfortunately no. Regular vegan yogurt is too thin and won't provide the thick, creamy base this recipe needs. Greek-style is non-negotiable here.

What can I use instead of Biscoff cookies?

You can use Oreo's or any other vegan cookies like Lorna Doone or Graham Crackers (check to be sure they are vegan).

Ingredients
  

  • 1 24- ounce container Forager Greek vegan yogurt or Kite Hill (sweetened or unsweetened)
  • 1 package Lotus Biscoff cookies you will have leftover cookies

Optional Add-ins (stir directly into the yogurt before adding the cookies)

  • instant espresso powder mix with a splash of hot water, then add to the yogurt
  • maple syrup not too much or it will water down the yogurt; alternatively, add favorite sweetener
  • vanilla extract
  • cinnamon or cardamom
  • cocoa powder
  • nut butter or Biscoff Spread

Optional Toppings (add just before serving)

  • Biscoff spread warm it in the microwave so it is easy to drizzle or add a splash of plant milk
  • crushed Biscoff crumbs
  • fresh berries
  • sliced banana
  • vegan whipped cream

Instructions
 

  • Prep the container: Use any container you like - a bowl, ramekin, glass jar, or even the original yogurt container for zero cleanup. Add as much yogurt as you want, just make sure there's enough depth to submerge the cookies.
  • Add optional mix-ins: Stir any optional add-ins directly into the yogurt in the container until well combined.
  • Place the cookies: Stand the Biscoff cookies vertically in the yogurt, pressing them in just enough so the bottom edge is slightly submerged. If your container is shallow, lay them horizontally instead. Use as many as will fit, leaving a little space between each one.
  • Chill: Cover and refrigerate for at least 6-8 hours, or overnight.
  • Serve and enjoy: Remove from the fridge, add any optional toppings, and serve immediately. The cookies will have softened into something almost cakey, and the whole thing scoops together into one creamy, dreamy bite.

Greek-style vegan yogurt is essential. Regular vegan yogurt is too thin and won't give you the right texture.
Both Forager Project (cashew-based, extra thick and tangy) and Kite Hill (almond-based, slightly lighter) work well here, but Forager is my top pick for this recipe becasue its sturdier texture holds the cookies upright better. 
I like the flavor of unsweetened yogurt in this dessert, but feel free to buy sweetened yogurt or add a sweetener of your choice.
For the coffee variation, stir one teaspoon of instant espresso powder dissolved in a tiny splash of warm water into the yogurt before assembling.
Keeps in the fridge for up to 2-3 days.

    I made this last night and it was embarrassingly easy for how good it turned out — the Biscoff cookies softened into something almost cake-like, and the yogurt balanced the sweetness perfectly. Definitely making this a regular thing.

    Okay, I was skeptical, but I am fully converted. I make it before bed, have it the next day, and I have zero regrets. So creamy, so easy, so good. Doesn't even need the add-ins or toppings; it's super simple and super good. This was a good TikTok trend made vegan.
