Ingredients

These vegan glazed carrots require minimal ingredients. See the recipe card for quantities.

ingredients for vegan glazed carrots
  • You can easily modify the recipe if you don't have all of these ingredients on hand. For example, try substituting brown sugar with maple syrup or agave or using coconut oil instead of butter.
  • Substitute baby carrots with full-sized carrots cut into coins or sticks.

Variations

Add other root vegetables, such as parsnips, sweet potatoes, turnips, or rutabagas, to create a medley of glazed veggies.

How To Make Vegan Glazed Carrots

Here are some pictures for you to see what you'll be doing. See the recipe card for details.

Step 2: Toss the carrots in the sweet and savory glaze until they are fully coated.

Step 3: Spread the glazed carrots on a baking sheet in a single layer, ensuring they are not overlapping.

Step 4: Bake for 25-30 minutes or until the carrots are tender and the glaze is bubbly. Garnish with fresh parsley and/or chopped pecans or walnuts before serving.

Top Tips

  • Baby carrots generally come in uniform sizes, but occasionally, you may find some that are smaller or larger. It's important to note that there may be variations in tenderness after cooking. When slicing larger carrots, ensure they are of consistent size to ensure even cooking.
  • To store leftover glazed carrots, allow them to cool completely. Then, transfer them into an airtight container and store them in the refrigerator for up to 3-4 days. To reheat, gently warm them up in a pan over medium heat or in a microwave until heated through.
  • Aim for a glaze that is not too thick yet not too thin. It should evenly coat the back of a spoon. If it's too thick, add a bit of water or broth. If it's too thin, allow it to simmer a bit longer to reduce and thicken.

Serving Suggestions

  • Serve for a holiday spread alongside Vegan Cranberry and Apple Stuffing, Cranberry Sauce, and Vegan Scalloped Potatoes.
  • Serve the carrots on a bed of fresh greens like arugula or spinach to create a vibrant salad. Drizzle with a light vinaigrette like Classic French Salad Dressing for extra flavor.

Recipe FAQS

What types of carrots work best for glazing?

Any carrots can be glazed. However, baby carrots or young, tender carrots often have the best results due to their natural sweetness and tender texture.

How can I store and reheat glazed carrots?

glazed carrots can be stored in an airtight container in the refrigerator for up to four days and reheated in a microwave or on the stovetop.

Do I need to peel the carrots before glazing?

While it's not necessary to peel the carrots, doing so can result in a smoother texture and brighter color. However, if you prefer, you can scrub them clean.

How do I thicken the glaze?

Thicken the glaze by cooking it longer to allow the liquid to evaporate. If you prefer, use a cornstarch slurry by mixing 1 tablespoon of cornstarch with an equal amount of cold water. Stir until the cornstarch is completely dissolved and add it to the glaze.

    5 stars
These were a great, quick side dish we made for Thanksgiving. While a pound of carrots sounds like a lot, it fit into a small serving dish and fed 6 of us with a little left over. It was delicious and easy to make.
