Description
Craving something savory, delicious, quick, and easy to make? Look no further than this easy vegan pizza roll recipe! These mouth-watering bites are the perfect snack or meal for any occasion, whether you're watching a big game or just looking for a quick and tasty appetizer option.
Ingredients
- 1 puff pastry dough (store-bought or homemade, see tips)
- 1/2 cup marinara sauce
- 1 cup vegan mozzarella cheese, shredded
- 1/2 cup vegan chorizo
- 1 cup fresh spinach
- 1/4 cup fresh basil, chopped
- pinch of salt and pepper, if desired
Instructions
- Preheat: Get your oven preheated to 400°F (200°C).
- Roll Out Dough: Begin by rolling your dough into a rectangle on a lightly dusted surface with flour.
- Slather: Once spread out, slather on a layer of tomato sauce and sprinkle your chosen toppings.
- Roll: Carefully roll the dough up into a snug log. To ensure your pizza rolls at the end look uniform and tidy, pinch the ends of the log or trim them off.
- Slice: Now, slice the log into pieces about 1 inch thick and arrange them on a baking sheet, giving them some space to puff up.
- Bake: Slide them into the oven and let them bake for 20-25 minutes or until they've turned a beautiful golden brown.
- Serve: Once done, serve them piping hot with extra marinara sauce or a vegan ranch dip.
Notes
The nutritional profile is only an estimate based on the ingredients in this recipe. This will vary depending on the dough and toppings you use.
You can brush the rolls lightly with olive oil or soy milk to get them to a golden brown, but I don't find it necessary with the store-bought pastry dough.
In the US, two vegan puff pastry options are Pepperidge Farms and Pillsbury (note: contains palm oil).
Roll the dough into a rectangle as evenly as you can with a rolling pin. Don't worry if the ends aren't perfect; you can trim them. Aim for a dough thickness that's just right, avoiding overly thick or thin layers for optimal cooking.
For the rolls, strike a balance with the filling. Too little, and they're all dough; too much, and they're hard to roll. Find the happy medium for the perfect bite.
Spread the filling, leaving a margin around the edges. Roll the dough tightly, then seal by pinching or trimming the edges.
Cut the roll with a sharp knife into uniform pieces, and arrange them on a parchment-lined baking sheet.
These rolls are best served warm, accompanied by extra marinara sauce or Vegan Ranch for dipping.
