- 1 tbsps lemon juice
- 1 tbsp maple syrup (alternatively use agave nectar)
- 1/2 cup vegan mayo
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper
- water (as needed to thin out)
Instructions
- Prepare the dressing: Combine the mint leaves, lemon juice, maple syrup, mayo, salt, and black pepper in a bullet or blender. Taste and adjust the seasoning if desired.
- Serve: Serve over your favorite salad or grain bowl.
